This cherry chocolate chip cake is an old recipe that I decided to update with even more cherry flavor. The chopped cherries really add so much, plus the cake itself is different. It’s now more closely based on my moist vanilla cake, with changes that help keep the chocolate chips and chopped cherries afloat. It was good before but those few changes make it even better now.

There are cherries and chocolate chips in literally every bite of this cake, without there being too much of one or the other. When it comes to the cherries, you need maraschino cherries. And not just any maraschino cherries, but the bright red classic ones. The ones they put in drinks at restaurants. With the corn syrup and all. I tested this recipe with a few brands to be sure it would work with them all and it did. However, the more natural maraschino cherries didn’t give the cake nearly as much flavor. So, if you want to be sure you taste the cherry, stick with the bright red, unnatural ones. Ha!

Why This Cherry Chocolate Chip Cake Is So Good

  • Lots of cherry flavor. There’s chopped maraschino cherries and cherry juice in the cake, plus cherry extract in the frosting. My favorite part is biting into the chopped cherries in the cake!
  • Chocolate in every bite. I opted for mini chocolate chips because they disperse more evenly in the batter and I liked the balance achieved with them vs larger chocolate chips and the cherries. They also make an easy decoration on the outside!
  • Light, tender cake layers. I really wanted a cake that was not only flavorful but also tender and moist. By starting with my moist vanilla cake and making just a few changes, I was able to create a crumb that stays moist for several days and is still light and tender.
  • The cherry buttercream. It’s made with maraschino cherry juice and cherry extract to really give it the best flavor. The cherry juice gives it such a beautiful and perfect shade of pink, without having to use any gel icing color.

I have lots of great strawberry cakes on my site, including my homemade strawberry cake, strawberry shortcake cake and my strawberry crunchy layer cake. But I’m often asked in the comments of my fresh strawberry cupcakes recipe if those cupcakes can be turned into a cake. That recipe is a little different than my others because strawberries aren’t pureed and added to the cake batter, or just layered between cake layers, they are chopped and baked into the cupcakes.

Since I’ve gotten that question quite a bit, and simply increasing that cupcake recipe and baking a cake turns out quite dense, I decided to work on a cake version. It took a little bit of time and I came back to it a few different times, making it better and better each time. So much so that the hubs declared it the best cake I’ve ever made. Quite a thing to say after all these years of making cake!

So, this recipe is derived from the cupcakes, but has been adjusted for the ideal cake texture. It still has fresh berries baked right into it. No need to bother with purees or making a reduction – just pure strawberry flavor with a little less fuss.

That said, I did do the puree and reduction for the buttercream. This is meant to be a FRESH strawberry cake, after all, and that’s how the frosting is for the original cupcakes. But if you really want to avoid that, you can replace the strawberry puree with ground up freeze-dried strawberries. Check out my strawberry frosting recipe to see how to go about that.

Why This Fresh Strawberry Cake Is So Good

  • FRESH strawberries in every bite. This cake is FULL of chopped strawberries (like 2 pounds of strawberries!), so you get pieces of fresh berries in every single bite.
  • Moist & tender crumb. This cake is moist and tender, without being overly dense, which was the primary issue with just using the strawberry cupcake recipe.
  • The whipped strawberry buttercream. Whipped buttercream is simply classic buttercream that’s whipped at the end. Whipping it lightens the buttercream, which pairs really nicely with the cake.

Black bottom cupcakes offer the best of both worlds with a moist chocolate cupcake and creamy chocolate chip cheesecake filling. They’re a classic, old-fashioned recipe that is kind of like a cheesecake cake in cupcake form (think Hershey’s chocolate bar cheesecake cake with fewer layers). I’m not sure exactly where or how they originated, but it seems to be in Maryland, as they’re sometimes referred to as Baltimore black bottom cupcakes and can be found in every store and bakery in the region.

What Makes These Cupcakes Different

My black bottom cupcakes recipe deviates from the classic a bit. Here’s how:

  • Vinegar – There’s no vinegar in the cupcake batter. Contrary to what you might read, it’s not necessary to react with the baking soda to rise – cocoa powder is acidic and does that.
  • Cocoa powder – I added a little extra cocoa to ramp up the chocolate flavor a bit.
  • Eggs – I also used an egg. Many recipes don’t use one, but I think it really improves the texture of the cupcakes and helps keep them from drying out in the fridge.

Why These Black Bottom Cupcakes Are So Good

  • Two desserts in one. These cupcakes combine two desserts – moist chocolate cupcakes and tangy cheesecake into one dessert. I love the combination of the creamy cheesecake and soft cupcake in every bite.
  • The cheesecake filling. I add mini chocolate chips to my filling so there’s extra dots of chocolate in every bite. It’s smooth and creamy and just the right balance of tangy and sweet.
  • Moist chocolate cupcake. The rich chocolate cupcake makes up the “black bottom” of this dessert. The crumb is moist and tender but sturdy enough to hold the weight of the cheesecake filling.

I’ve been making this chocolate chip cookie ice cream cake for well over a decade now. In fact, I first shared it way back in 2015! Since then, I’ve updated the recipe to make it even better.

The previous version of this ice cream cake was delicious, but I used my chocolate chip cookie cake as the bottom layer, and it was so thick that it could be hard to cut through when frozen. So we did a lot of testing to get a cookie that says a little softer when frozen, and we divided it into two layers. That way, you still get just as much cookie, but the two layers make it easier to cut. Plus, now it feels more like a chocolate chip cookie ice cream sandwich, which was one of my favorite treats as a kid!

I’ve made many different ice cream cakes over the years, ranging from classics like copycat Dairy Queen ice cream cake and Neopolitan ice cream cake to decadent, over-the-top favorites like cake batter fudge brownie ice cream cake and Oreo brookie ice cream cake. But there’s just something about the simplicity of this chocolate chip cookie ice cream cake that keeps it a family favorite that gets requested again and again.

I love coconut desserts and have plenty of coconut desserts on my site, like my coconut cheesecake and my coconut poke cake. But I realized recently that I didn’t have a straight-forward, classic coconut cake and that definitely needed to change.

So, I started with the cake layers in my coconut custard cake, which I’m a big fan of, as are many who have made it. The only changes I made were to swap a little more butter for oil, since it makes the cake even more moist and tender, and to add a touch of baking soda in place of some baking powder. That touch of baking soda makes the cake layers even more tender, as well. And then I left out the custard filling and opted for classic cream cheese frosting instead.
