I love fresh berries in the summer and I realized recently that my selection of cheesecakes with berries in them is a bit less than I’d like. I’ve got a lovely lemon raspberry cheesecake, blueberry cheesecake, easy strawberry cheesecake, and a few others, but I felt like it was time for a little something else. This recipe nails that summer berry cheesecake feeling I was going for. The pops of fresh fruit flavor that are in every bite of the creamy vanilla cheesecake feel so indulgent, but are also very light and fresh. It’s definitely one of my new favorite cheesecakes.

The base of the cheesecake is my graham cracker crust and classic vanilla cheesecake. To add the mixed berry filling, I looked to my blueberry sauce and made a few adjustments to account for the multiple types of berries and a slightly different texture for inside the cheesecake. It’s a little thicker than a typical sauce, but is still thin enough that it feels saucy when you bite into it.

Instead of just putting the sauce on top, there’s little surprises in each bite throughout the cheesecake. Everything comes together beautifully and turns into the most amazing cheesecake for summer. I hope you love it!

As much as I love a classic New York style cheesecake with a dense, tangy filling or even a simple no bake cheesecake, I also love experimenting with different types of cheesecake. This ricotta cheesecake is a fun variation with great, light flavor. It’s quite different in texture than your traditional vanilla cheesecake, but that’s also part of the fun.

This ricotta cheesecake is so delicious and lovely, so rather than trying to add cream cheese to make it more traditional in texture, I went all in on the ricotta. So don’t make this expecting it to be just like your average cheesecake made with cream cheese, because it’s not. It has more texture to it because of the ricotta and the filling is a bit softer, plus the flavor is subtle and not as tangy.

I did test it with added cream cheese, but even replacing just 8 ounces of the ricotta with cream cheese totally changed the flavor. Cream cheese is very strong and ricotta is more subtle, so the cream cheese took over. Why bother with ricotta if you aren’t going to taste the ricotta?

Why Make Cheesecake With Ricotta Cheese?

  • Subtle flavor. As noted above, I really kept the focus on the ricotta and that’s what you taste in the cheesecake. There’s just a hint of lemon to give it a light lemon flavor but the ricotta is really the star of the show here.
  • Simple & rustic. Similar to a basque cheesecake, ricotta cheesecake is more rustic and has no crust. Again, the flavor of the crust takes over. If you love ricotta, you don’t need any bells and whistles, just the classic ricotta filling.
  • Light, creamy filling. The ricotta gives this cheesecake a completely different texture than cream cheese. It’s much lighter and not as dense, while still being creamy. To make it even creamier, be sure to process the ricotta after it’s strained.
  • Only 5 ingredients. Besides the ricotta cheese, this recipe just calls for basic ingredients like vanilla, sugar, and eggs to sweeten and stabilize the filling. The only other ingredient is a bit of lemon zest for the added flavor.

Biscoff, the spiced shortbread cookies often given out on planes, has really taken off in recent years. The company now makes Biscoff cookie spread, which is a bit like Nutella but with a buttery spiced cinnamon flavor. It’s so good! And, like Nutella, it makes an excellent addition to desserts. I’ve even combined the two before, to make Nutella Biscoff Icebox Cake.

This Biscoff cheesecake is made with both Biscoff cookies and the cookie spread. I wanted it to taste just like the cookies, with a rich spiced flavor. I did some testing to find just the right amount of Biscoff cookie spread and landed on 1 ½ cups. Less barely provided any Biscoff flavor, but more wasn’t necessary, and it started to negatively affect the texture. And then, of course, there’s the Biscoff cookie crust (which is basically a graham cracker crust but with Biscoff cookies instead of graham crackers) and even more cookie spread and crumbs on top of the cheesecake.

If you love Biscoff, you will come back to this cheesecake over and over. It’s so hard to resist the amazing flavor and relative simplicity.

Why I’m Obsessed With This Biscoff Cheesecake Recipe

  • Tastes just like the cookies. This cheesecake truly tastes just like the cookies. I mean, how could it not when the crust is made from cookie crumbs, there’s a generous amount of cookie spread in the filling, and even more crumbs and cookie spread on top?!
  • Simple to make. Biscoff cheesecake is a great entry point for anyone who has never made a cheesecake before. The simplicity reminds me a lot of my peanut butter cheesecake, which is very similar but obviously made with peanut butter instead of Biscoff. Plus, the Biscoff spread on top will hide any cracks or imperfections, so you don’t have to worry about it looking perfect.
  • Unexpected flavor. Even though Biscoff has become more popular recently, it’s still not the first flavor most people think of. If you offer to bring cheesecake, they’re probably expecting New York style cheesecake or maybe chocolate cheesecake. I love to surprise people with this Biscoff cheesecake. Even if they’ve never tried Biscoff before, they end up loving the flavor!

I got a request a little while back for a pistachio cheesecake that could be made for Christmas and loved the idea.
