They’re dense and chewy with a rich chocolate flavor that’s neither too bitter nor too sweet, and they have that signature crackly top. As a bonus, they’re incredibly easy to make with just cocoa powder (no melting chocolate!) and no need to break out the mixer.

There is SO much variation between brownie recipes, it’s crazy. I have various brownies on my site that all work well in their own ways for their specific recipes. As far as a plain (but not at all boring) brownie, I’ve always loved my Like-A-Box-Mix Brownies above all else. It’s a little cakier and lighter and truly delicious.

However, I’ve been working on the perfect fudgy brownie for some time. I love my blondie recipe so very much, that I actually started there. What I love about the final brownie recipe is that they are super easy to make, have that signature crackly top and fudgy center, are made with just cocoa powder and chocolate chips (no melted chocolate in the brownie batter). Plus they aren’t too sweet, or too bitter. Getting just the right flavor and texture is tough, but these brownies totally achieve it. They are rich and fudgy and stay nice for several days.

Why These Are The Best Fudgy Brownies

  • Stay fudgy for days. These brownies are great for making a day or two in advance because they stay moist and fudgy for days. It’s rare that they last more than a couple of days in my house, but if you have more self-control than I do, these babies will still be chewy on day 5!
  • Rich chocolate flavor. The chocolate in these fudgy brownies primarily comes from the generous amount of unsweetened cocoa powder in the batter and the chocolate chips folded in. The combination offers a flavor that’s rich but not too sweet or too bitter.
  • No mixer required. All you need to make these fudgy brownies is a few bowls and a whisk. Since the butter is melted, there’s no need to break out the mixer.

These strawberry brownies are one of my new faves. The strawberry and brownie combination is delicious and the two parts come together so perfectly. The strawberry mixture on top soaks into the brownie just a bit, giving them a super moist, fudgy quality that is hard to resist. And the fresh pop of fruit with the chocolatey base is perfect for summer!

I did a good bit of testing with this brownie to get it just right. The brownie base is my popular “like a box mix” brownie recipe. It’s a little more cakey than fudgy, which worked better after much testing for a couple of reasons.

First, the batter is a little thinner, so it lets the strawberry sauce sink into the batter just a bit to create little pockets for it to rest in, rather than just sitting on top and creating an awkward top layer. Second, the strawberry sauce seeps into the brownie a bit (but not too much), so it maintains itself as a separate layer, while also giving it a super moist and fudgy texture.

Why These Strawberry Brownies Are So Good

  • Soft & chewy for days. These brownies use vegetable oil, instead of butter, so they don’t dry out when refrigerated, like butter-based brownies would. These strawberry brownies are as soft and chewy on day 4 as they are on day 1!
  • Strawberry + chocolate. The combination of tart strawberry and rich chocolate is so good. The strawberry sauce is thick enough that it doesn’t just blend in with the brownie batter and leaves behind noticeable swirls, without being so thick it overpowers the brownie.
  • Super easy to make. The brownie recipe itself is super simple, no mixer required. The strawberry sauce is precooked on the stove to thicken it just a bit before it’s added on top of the brownies, but it’s simple and doesn’t take long.

But I think these caramel cookie bars are even easier than those recipes and just so delicious. Cookie bars are great for slicing and sharing, so these are a great option for parties, and they stay soft and chewy for up to 5 days!

Why These Caramel Cookie Bars Are So Good

  • Chewy chocolate chip base. The base of these caramel cookie bars is thick, chewy chocolate chip cookie bars. The recipe is similar to my chewy chocolate chip cookies, with some changes to account for bars instead of cookies. But they still have that same great texture and flavor. So good!
  • The caramel filling. Obviously, the caramel filling is the star of these caramel cookie bars. It’s a simple two ingredient filling, made with caramel and butter, that stays delightfully soft and chewy once baked and cooled.
  • Super easy to make. I think cookie bars are easier to make than cookies because you don’t have to shape the cookie dough, and the baking time isn’t quite as finicky for perfectly chewy bars. These caramel cookie bars take about an hour to make from start to finish. tTe hardest part is letting them cool completely before enjoying.
