I’m totally loving this coconut custard pie recipe. Various versions of this classic pie have been around for a while, but when testing them, I was a little disappointed. The textures were funky, they were over the top on the shredded coconut, or the eggs scrambled. There was rarely much “custard” to be found and they weren’t something I’d bake again. They definitely didn’t meet the idea I had in my head.

I decided to take a page from my honey pie recipe and partially cook the custard on the stove, before finishing it in the oven. So this recipe actually begins with that honey pie recipe, with some changes, of course. If you’ve ever made that pie – and you should, it’s one of my absolute favorites – then you know that the texture of this pie is amazing. This is a true custard-based pie with coconut flavor that’s not too much, and shredded coconut that complements the custard, rather than taking it over. It’s so good and is the new way you should make coconut custard pie.

Why This Is The Best Coconut Custard Pie Recipe

  • Ultra smooth, creamy custard filling. The custard starts cooking on the stove first, before being added to the crust and finishing in the oven. The stove portion is quick and easy, but creates a super smooth and creamy custard filling that melts in your mouth.
  • Great coconut flavor. This pie has a decent amount of coconut flakes, but it also uses coconut milk and a bit of coconut extract to add just the right amount of coconut flavor.

I really enjoy a good lemon meringue pie. The tart, but also sweet, lemon filling with the light meringue and the crisp, buttery crust is a heavenly combination. But meringue can be finicky and is the defining piece that determines a great pie, or a soupy pie. I did alllll the testing so that you can have it turn out right every time!

This pie uses the more traditional French meringue topping, but it is fully baked. While French meringue can be finicky and will eventually begin to weep a bit, if done correctly it can actually hold up really well for several days. The key to a stable meringue that doesn’t immediately weep is to use cream of tartar, a little cornstarch, and to cook it fully.

And if you want a truly reliable meringue that won’t weep at all, you can go with a Swiss meringue. It’s what I use on my Lemon Meringue Cheesecake. It’s delicious and I love it, but it has more of a marshmallow-y flavor to it, which I personally think can overpower this pie a bit. But it is super reliable!

Why This Is The Best Lemon Meringue Pie

  • Tart lemon filling. One of the reasons I love lemon meringue pie is the creamy sweet/tart lemon filling. It manages to be both sweet and tart, which is how lemon is supposed to be.
  • Perfect stable meringue. After lots of trial and error, I finally figured out how to make a stable meringue topping that doesn’t weep. There’s no need to devour this pie in a few hours because the topping holds up for days. Just be sure to read through all the tips in this post before starting, so you can avoid some of the common mistakes!
  • Easy to make. The crust, filling and meringue each come together quickly and are fairly simple to make. The part you have to pay the most attention to is baking to ensure the meringue is fully baked.
  • Great for holidays. There are a few pies that make an appearance at nearly every holiday dessert table. For my family, that’s usually chocolate cream pie, pumpkin pie, and lemon meringue pie. I am now volunteered to make this pie every holiday, and everyone is always impressed by how pretty it is, how nice it looks, and how good it tastes.

Lovers of banana cream pie, I have a feeling you’ll love this coconut cream pie! It has a super smooth and creamy texture, and the flavor is just right. Why, you ask? While this pie filling could be made with just whole milk and coconut milk, the sweetened condensed milk takes it to another level. The additional flavor and creaminess it adds are truly on point. You get less egg flavor, more sweetness, and more creaminess. 

I also chose to use just egg yolks, rather than just whole eggs. After doing a side-by-side comparison, it was clear that the yolks gave the pie a smoother texture and richer flavor. Whole eggs made the filling a bit more gelatinous. Between the sweetened condensed milk and egg yolks, this pie is a winner!

Why This Coconut Cream Pie Is On Repeat

  • Texture delight. The custard filling for this pie is luxuriously creamy, and while it’s plenty thick, there is still a lightness to it. I love the added texture of the sweetened flaked coconut that gets stirred in at the end.
  • Layers of bliss. On top of that flakey crust and silky coconut cream filling, you get a light and fluffy homemade whipped cream topping. Finish it off with a generous sprinkle of shredded (or toasted) coconut if you really want to take this pie over the top.
  • Easy as pie. The filling for this pie is wonderfully easy to make, taking about 10 minutes on the stovetop. The pie does need to chill in the fridge, but that just makes it a great dessert to make ahead!

The idea for this banana pudding pie came about while testing some updates to my banana cream pie. I tested that filling with a few different milk combinations, including some sweetened condensed milk. I loved the version of the filling with sweetened condensed milk, but in trying to stick with a more traditional filling for that pie, I decided not to use that version for that pie.

However, it was too good not to use it for something! I really love banana pudding that is made with sweetened condensed milk, so it seemed natural to bring that filling into a banana pudding pie layered with banana slices and Nilla wafers. It was an amazing decision because this pie turned out even better than I imagined, and it is so good!

As much as I love my other banana pudding-inspired desserts, like banana pudding poke cake, I am kind of obsessed with this pie. It’s just so darn good! If you love banana pudding as much as me, this pie will be your jam.

Why I’m So Obsessed With This Banana Pudding Pie

  • Smooth, creamy filling. The cream filling is creamy and has the best flavor from sweetened condensed milk. Plus, after sitting, it takes on the banana flavor and softens the cookies. It’s thick enough to slice really well, but still soft and creamy.
  • A twist on a classic. This pie really is banana pudding in pie form, from the creamy pudding filling to the layers of fresh banana slices and Nilla wafers. It’s a fun new way to enjoy a Southern classic.
  • Perfect for summer. While I certainly plan to enjoy banana pudding pie year-round, I do think the light flavors and creamy texture make it perfect for summer. It’s definitely something different to surprise guests with.

I truly love all banana desserts and recently decided to revisit my banana cream pie recipe to see how it could be improved. I played around with filling options, trialing varying amounts of cornstarch, using all eggs or all egg yolks, and even the milk used. That experimenting led to both this improved banana cream pie recipe and my new banana pudding pie (coming soon!).

One issue that often occurs in cream pies like this one, chocolate cream pie, and coconut cream pie, is that the filling is too soft to hold its shape when sliced. This pie uses a combination of cornstarch and eggs to thicken it. I personally like the combination of egg and egg yolks, rather than all whole eggs, because I think it has a more creamy, less gelatin-like, texture. Then you have the buttery, flaky crust and two layers of fresh banana slices, so you really get that banana flavor in every bite. It’s pretty perfect, if I do say so myself!

Why This Is The Best Banana Cream Pie Recipe

  • Made from scratch. Every part of this banana cream pie is made from scratch, including the pie crust and the whipped cream topping. I think the improved flavor and texture are rewards for the extra effort.
  • Thick, creamy filling. I played around with different options for the filling before getting it just right. With just whole eggs, the filling was a little firmer, but with the combination, it holds its shape and is a little richer and creamier, which I love. It’s the best of both worlds!
  • Lots of fresh bananas. One of my biggest annoyances is when banana cream pie doesn’t actually taste like banana. To make sure this pie has banana in every bite, I used 4 large bananas to make two layers of fresh banana slices.
