I love a good scone, but often find store-bought ones to be a bit disappointing. Whether too dense, too dry or something else, they leave something to be desired. These lightly sweet, tender, buttery scones are just perfect, if you’d rather just make them at home. They are packed with fresh blueberries and topped with a simple sweet icing for a touch of indulgence. They have a lightly cakey texture – rather than being too biscuit-like – that I am obsessed with, and they’re so much easier than many scone recipes (no laminating required!).

Pair them with a mug of hot coffee or tea, and just try to have only one. I dare you!

What Makes These the Best Blueberry Scones?

  • No-knead, no problem. Many scone recipes have you do a fancy process of repeatedly rolling and folding the dough over itself to create a layered, flakey, biscuit-like texture. Not here. My no-knead method is so much easier and yields a superior texture. See my next point.
  • Cakey, satisfying texture. Thanks to the simple mixing method, these scones have this satisfying cakey texture, which I much prefer to the flakey, biscuit-like texture you find in many scones.

What Makes These Chocolate Muffins So Good?

Not all muffins are created equal and a good chocolate muffin can be hard to find. There’s a lot of variation out there and with cocoa powder that has a tendency to dry things out, a moist muffin is hard, but so important, to find. I started with my favorite chocolate cupcakes, because there’s not another out there that is as tender and moist. The key was to make them more muffin-like. What would make them just right? In addition to remaining moist and tender:

  • A lovely muffin dome – Achieved by filling the muffin tins full and adjusting temperature to account for rise.
  • Rich chocolate flavor – Quality cocoa powder that is “bloomed” by the addition of hot water.
  • Stay moist for several days – The use of vegetable oil and buttermilk give these muffins loads of moisture and tender crumb.
  • Adding chocolate chips – But you don’t have to include them!
  • Simple mixing method – Because muffins don’t need to be complicated.

I achieved all of the above with these muffins and they are so good!

As someone who has experimented with seemingly endless recipes for this all-time classic over the years, this is the one. It’s got a slightly lighter texture than my Easy Banana Bread, while still being nice and dense, and it’s SO tender and moist with undeniable banana flavor and a subtle hint of cinnamon.

  • Extra moist. The majority of banana bread recipes use butter as their primary fat. I do it a little differently, opting for half butter and half vegetable oil. The oil makes the bread so much more moist and almost velvety, while still getting nice flavor from the butter.

To achieve that, I replaced the milk in the original lemon loaf with sour cream, which is thicker and more dense, and whipped the egg whites to add additional structure.
