And with a few key ingredients, they stay soft enough to enjoy when frozen. I’m can’t stop eating them! They are such a fun and tasty treat for summer!

These ice cream sandwiches are inspired by the ones from Disney’s Animal Kingdom. I saw a couple videos about them and they sounded amazing! Since I can’t just go to Animal Kingdom to try them, I decided to make a version at home. I haven’t tried the original one and am not sure of its exact flavor, so it’d be hard to call these a copycat. However, I watched and read a lot of what has been said about them and feel like I am at least very close. If nothing else, it’s a fun version to try at home. And if you’ve never heard of them, just make them because they are awesome!

Testing, Testing!

I spent a good bit of time testing the brownie and cookie dough layers. I wanted the ice cream sandwich to have a good bite and not have one layer significantly firmer than the other. The trickiest layer was the cookie dough. Cookie dough is dense and made with butter, and both factors make for a very firm layer when frozen. So, I started with reducing the butter and replacing it with oil. The butter/oil combination gives both the flavor from butter and a softer texture when frozen from the oil.

Another thing I added was some corn syrup, similar to adding corn syrup to the fudge layer of my Copycat Dairy Queen Ice Cream Cake. Corn syrup doesn’t fully freeze, so it helps things stay soft in the freezer. That was the final secret to nailing the texture, I think, because the cookie dough came out perfectly!

As for the brownie layer, I tested out my classic easy brownie recipe (oil-based) and my newest fudgy brownie recipe (butter-based), but without the chocolate chips. The brownie layer was naturally softer when frozen than the cookie dough with both versions. I ultimately decided to go withe the fudgy brownie recipe. It’s still soft when frozen, but also holds up a little better to the ice cream and cookie dough layers to meet their firmness. I’m so in love with the final version of these – firm enough to slice and hold the ice cream, soft enough to bite into straight from the freezer.

These Brownie Cookie Dough Ice Cream Sandwiches Are A Fun Treat

  • (Almost) Disney copycat. As I mentioned above, I can’t say these brownie cookie dough ice cream sandwiches are an exact Animal Kingdom copycat because I’ve never tried the ones sold there. But they look pretty close to all the pictures I’ve seen and I’d use all the same words to describe how good they are!
  • Firm but chewy layers. The key to a good ice cream sandwich, whether it’s a classic Neapolitan ice cream sandwich or chocolate chip ice cream cookie sandwiches, is to ensure that the layers stay soft enough to bite through when frozen. That took some trial and error here, especially for the cookie dough, but I’m happy to say we nailed it.
  • Store well for months. It does take a bit of effort to make these brownie cookie dough ice cream sandwiches, but the good news is that one batch makes 14 to 21 ice cream sandwiches AND they freeze well. When stored properly, they can last for the entire summer in the freezer (not that I would ever anticipate them lasting that long)!

Triple Berry Cheesecake https://www.lifeloveandsugar.com/triple-berry-cheesecake/ https://www.lifeloveandsugar.com/triple-berry-cheesecake/#comments Wed, 17 Jun 2026 14:59:32 +0000 https://www.lifeloveandsugar.com/?p=168440 This Triple Berry Cheesecake has pockets of fresh berry filling throughout a creamy vanilla cheesecake. It’s all set in a lightly sweet graham cracker crust. There’s amazing berry flavor in every bite and it’s perfect for summer!

slice of triple berry cheesecake on white plate

I love fresh berries in the summer and I realized recently that my selection of cheesecakes with berries in them is a bit less than I’d like. I’ve got a lovely lemon raspberry cheesecake, blueberry cheesecake, easy strawberry cheesecake, and a few others, but I felt like it was time for a little something else. This recipe nails that summer berry cheesecake feeling I was going for. The pops of fresh fruit flavor that are in every bite of the creamy vanilla cheesecake feel so indulgent, but are also very light and fresh. It’s definitely one of my new favorite cheesecakes.

The base of the cheesecake is my graham cracker crust and classic vanilla cheesecake. To add the mixed berry filling, I looked to my blueberry sauce and made a few adjustments to account for the multiple types of berries and a slightly different texture for inside the cheesecake. It’s a little thicker than a typical sauce, but is still thin enough that it feels saucy when you bite into it.

Instead of just putting the sauce on top, there’s little surprises in each bite throughout the cheesecake. Everything comes together beautifully and turns into the most amazing cheesecake for summer. I hope you love it!

Why you’ll love Triple Berry Cheesecake

  • Summer berries – There are few things better in summer than fresh berries. They are the star of the show here and shine through in the pockets of sauce throughout the cheesecake.
  • Simple, but beautiful – Cheesecakes have a natural charm to them and the berry swirl on top adds a simple beauty. It’s perfect for an occasion without being overdone.
  • Easy to make – The hardest part about a cheesecake is the long bake time. The rest is just following the steps. Each component is simple to make and it all comes together easily. Just give yourself plenty of time for baking and cooling.

Chocolate Chip Cookie Ice Cream Cake https://www.lifeloveandsugar.com/chocolate-chip-cookie-ice-cream-cake/ https://www.lifeloveandsugar.com/chocolate-chip-cookie-ice-cream-cake/#comments Wed, 06 May 2026 16:02:50 +0000 https://www.lifeloveandsugar.com/?p=12422 Creamy vanilla ice cream is sandwiched between two layers of chewy cookies in this Chocolate Chip Cookie Ice Cream Cake recipe. With mini chocolate chips decorating the outside, it’s like a chipwich ice cream sandwich, but in full cake form!

A chocolate chip cookie ice cream cake with one slice missing

I’ve been making this chocolate chip cookie ice cream cake for well over a decade now. In fact, I first shared it way back in 2015! Since then, I’ve updated the recipe to make it even better.

The previous version of this ice cream cake was delicious, but I used my chocolate chip cookie cake as the bottom layer, and it was so thick that it could be hard to cut through when frozen. So we did a lot of testing to get a cookie that says a little softer when frozen, and we divided it into two layers. That way, you still get just as much cookie, but the two layers make it easier to cut. Plus, now it feels more like a chocolate chip cookie ice cream sandwich, which was one of my favorite treats as a kid!

I’ve made many different ice cream cakes over the years, ranging from classics like copycat Dairy Queen ice cream cake and Neopolitan ice cream cake to decadent, over-the-top favorites like cake batter fudge brownie ice cream cake and Oreo brookie ice cream cake. But there’s just something about the simplicity of this chocolate chip cookie ice cream cake that keeps it a family favorite that gets requested again and again.

Why We Love This Chocolate Chip Cookie Ice Cream Cake

  • Two desserts in one. This recipe gives you chewy chocolate chip cookies and creamy vanilla ice cream together in every bite.
  • The cookie stays soft. I went to great lengths testing a cookie that stayed soft enough to slice when frozen, but still had a great cookie texture. This one is perfect!
  • Great to make ahead. This ice cream cake is ideal for making a day in advance, as it needs to chill for 5-6 hours once assembled. It stays good for up to a week, so feel free to assemble it even two days ahead.
  • Customize the flavor & toppings. Feel free to customize this ice cream cake with your favorite ice cream and decorate it however you’d like.

Banana Pudding Pie https://www.lifeloveandsugar.com/banana-pudding-pie/ https://www.lifeloveandsugar.com/banana-pudding-pie/#comments Tue, 07 Apr 2026 13:00:00 +0000 https://www.lifeloveandsugar.com/?p=163862 With layers of banana slices, Nilla wafers, creamy pudding, and whipped cream, this banana pudding pie is like classic banana pudding in a pie crust. It’s so good, easy to make and a bit more elegant way to enjoy banana pudding!

Banana pudding pie with a slice missing to show the layers

The idea for this banana pudding pie came about while testing some updates to my banana cream pie. I tested that filling with a few different milk combinations, including some sweetened condensed milk. I loved the version of the filling with sweetened condensed milk, but in trying to stick with a more traditional filling for that pie, I decided not to use that version for that pie.

However, it was too good not to use it for something! I really love banana pudding that is made with sweetened condensed milk, so it seemed natural to bring that filling into a banana pudding pie layered with banana slices and Nilla wafers. It was an amazing decision because this pie turned out even better than I imagined, and it is so good!

As much as I love my other banana pudding-inspired desserts, like banana pudding poke cake, I am kind of obsessed with this pie. It’s just so darn good! If you love banana pudding as much as me, this pie will be your jam.

Lindsay, author of Life Love and Sugar, holding a plate of cupcakes and smiling.

Why I’m So Obsessed With This Banana Pudding Pie

  • Smooth, creamy filling. The cream filling is creamy and has the best flavor from sweetened condensed milk. Plus, after sitting, it takes on the banana flavor and softens the cookies. It’s thick enough to slice really well, but still soft and creamy.
  • A twist on a classic. This pie really is banana pudding in pie form, from the creamy pudding filling to the layers of fresh banana slices and Nilla wafers. It’s a fun new way to enjoy a Southern classic.
  • Perfect for summer. While I certainly plan to enjoy banana pudding pie year-round, I do think the light flavors and creamy texture make it perfect for summer. It’s definitely something different to surprise guests with.

Red Velvet Cheesecake Cake https://www.lifeloveandsugar.com/red-velvet-cheesecake-cake/ https://www.lifeloveandsugar.com/red-velvet-cheesecake-cake/#comments Thu, 29 Jan 2026 10:55:54 +0000 https://www.lifeloveandsugar.com/?p=35400 This Red Velvet Cheesecake Cake recipe has layers of moist red velvet cake and creamy cheesecake all covered in cream cheese frosting! If you’ve ever had the cheesecake by the same name at The Cheesecake Factory and loved it, this is the perfect recipe to make at home!

“I made this for my friend’s birthday. Not only was it gorgeous to look at but incredibly delicious! Impeccable directions made this very easy – time consuming – but well worth it. Thank you, Lindsay.” – Anne

You guys know that I love a good cheesecake and when we get out to eat, I always have to try the cheesecake if it’s on the menu. Which is how I first ended up trying this red velvet cheesecake cake, one of the popular options at The Cheesecake Factory. It combines two of my favorite things – red velvet cake and vanilla cheesecake. I actually already have a red velvet cheesecake recipe but I love that this one has the actual cake layers along with the cheesecake too.

This isn’t the first time I’ve recreated a dessert from The Cheesecake Factory. I have several other cheesecakes inspired by theirs, including the Banana Cream Cheesecake (my all-time fave), Oreo Dream Extreme Cheesecake, Mango Key Lime Cheesecake and Kahlua Coffee Brownie Cheesecake. If you love red velvet, though, this red velvet cheesecake cake will be your favorite.

Lindsay, author of Life Love and Sugar, holding a plate of cupcakes and smiling.

Why You’ll Love Red Velvet Cheesecake Cake

  • Cheesecake AND cake. The best of both worlds! The red velvet cake layers are super moist and full of great flavor, and the cheesecake is creamy and delicious.
  • Tangy red velvet flavor. I’ve become a lover of red velvet cake since I started making it myself from scratch, so I personally LOVE the flavor of this cake. I pulled from my classic red velvet cupcake recipe to get the perfect balance of tangy, slightly chocolatey flavor.
  • Holiday ready. This gorgeous cake makes the perfect centerpiece for Valentine’s Day, Christmas, and any other special occasion. It’s definitely a cake meant to impress!
